Cagen means "just right" in Japanese. Each element of sushi, down to a grain of rice or freshly grated wasabi, is tended with the utmost care and deliberation.

In search of new flavors and experiences, Chef-owner Toshio Tomita sources hard-to-find fish flown in directly from Japan. To highlight seasonal flavors and textures, Chef adds a “just-right” amount of surprise, from chimichurri to sakura salt. The result is a unique Edomae sushi you’ve never tasted before.
